Passion Fruit Curd

What is curd?
Curd has origins in India, the primary ingredients are beaten egg, yolks, and butter which slowly cooked together will reach a thick and soft flavorful spread. Lemon curd is known to have been served in England, as far as 2 centuries ago as a jam substitute. Fruit curd is known as a dessert spread and topping usually made with citrus fruit or berries.
Other flavors such as passion fruit or mango are becoming popular recently.
Here's a simple recipe that can easily be done at home, made with Costa Rican passion fruit puree, it is simply delicious!
Ingredients
- 4 fresh large whole eggs
- 2 egg yolks
- 1 cup of sugar
- ½ cup Jungle Pulp Passion Fruit Puree
- 8 Tbsp of butter
- ¼ tsp fine salt
In a 2 quart saucepan, combine passion fruit puree, sugar, eggs, and butter. Cook over medium-low heat until thick enough to hold marks from whisk, and first bubble appears on surface, about 6 minutes.
