Flag Pie

Pie Crust
- 2 cups flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup of very cold butter
- ½ cup of cold water with ice
- 1 tablespoon of lemon juice
Strawberry filling
- 3 cups of strawberry cut into slices
- ½ cup of Strawberry pulp
- ½ cup flour
- ½ cup of sugar
- 1 teaspoon of ground cinnamon
Blackberry Stuffing
- 2 cups of blackberries
- ¼ cup of BlackBerry pulp
- ½ cup of sugar
- ½ cup flour
- Egg wash: 1 egg beaten with 1 tablespoon milk or water
PREPARATION
Preheat the oven to 425 °F.
Pie Crust
- In a food processor, slowly mix together the flour, salt, sugar and butter until combined.
- Add the cold water and lemon juice to the flour mixture, and slowly combine.
3. Transfer the dough onto a piece of parchment paper, shape the dough into a ball, and place in the refrigerator.
Strawberry Filling + Blackberry Filling
- In a large bowl, combine the dry ingredients.
- In a separate bowl, mix together the fresh strawberries and the Strawberry Pulp.
- Then, mix together both the dry ingredients and the wet ingredients.
- Repeat the process for the Blackberry Filling.
Assembling the Pie
- Once the dough has chilled in the refrigerator, remove the dough from the parchment paper and roll out the dough, using a floured rolling pin. Reserve a small portion of the dough to use on top of the pie for decoration.
- In a greased pie dish, gently lay the dough across the dish and form it to the bottom, using your fingers.
- Pour the Strawberry Filling over 3/4 of the dough, and then pour the Blackberry Filling over the remaining 1/4 of the dough. This will create the American flag effect that is shown in the image above.
- Cut the reserved dough into thin strips and star shapes, then place the decorative dough pieces on top of the filling to create the American Flag design.
- Brush the dough with the egg wash mixture.
- Bake in the oven at 425 °F for 35-40 minutes, until the pie crust is golden brown. Let cool completely before serving.
