Coconut Pancakes with passion Fruit

Ingredients
- 1 1/3 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons of sugar
- 1 teaspoon salt
- 3 tablespoons of grated coconut
- 1 large egg
- 4 tablespoons of melted butter
- ½ cup buttermilk
- 2 teaspoons of vanilla extract
- 1 cup Passion Fruit pulp divided into two parts
- Berries
- Additional shredded coconut
Instructions
- Sift the flour, sugar, baking powder, shredded coconut, and salt into a large bowl and whisk together then set aside.
- Melt the butter in a small bowl. In a medium bowl, beat the buttermilk, egg, vanilla, and ½ cup passion fruit pulp together. Add the melted butter.
- Add the wet mix to the dry and mix until just combined.
- Place a pat of butter in a large skillet over medium-high heat. Once melted and bubbly, add about 1/3 to 1/2 cup of batter to each pancake.
- Cook for a few minutes until golden, then flip and cook an additional minute.
- Serve the Pancakes and decorate with an additional ½ cup of Passion Fruit pulp and decorate with fruit and a little more grated coconut.
