Coconut Pancakes with passion Fruit

Ingredients

  • 1 1/3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons of sugar
  • 1 teaspoon salt
  • 3 tablespoons of grated coconut
  • 1 large egg
  • 4 tablespoons of melted butter
  • ½ cup buttermilk
  • 2 teaspoons of vanilla extract
  • 1 cup Passion Fruit pulp divided into two parts
  • Berries
  • Additional shredded coconut

Instructions

  1. Sift the flour, sugar, baking powder, shredded coconut, and salt into a large bowl and whisk together then set aside.
  2. Melt the butter in a small bowl. In a medium bowl, beat the buttermilk, egg, vanilla, and ½ cup passion fruit pulp together. Add the melted butter.
  3. Add the wet mix to the dry and mix until just combined.
  4. Place a pat of butter in a large skillet over medium-high heat. Once melted and bubbly, add about 1/3 to 1/2 cup of batter to each pancake.
  5. Cook for a few minutes until golden, then flip and cook an additional minute.
  6. Serve the Pancakes and decorate with an additional ½ cup of Passion Fruit pulp and decorate with fruit and a little more grated coconut.
